Nutty Cauliflower Cheese
This is such a delicious version of cauliflower cheese and it's really easy to make and not too unhealthy!

Serves 2
- 1 Cauliflower
- 2/3 tub Creme Fraiche
- 50ml of Semi-Skimmed Milk
- 1 tsp Salted Butter
- 1 tsp Wholegrain Mustard
- 2 cloves of Garlic
- 50g Cheddar Cheese
- Handful of Brazil Nuts (about 6-8)
- 1 tsp Dried Mixed Herbs
- Black Pepper to season
Takes 15minutes on the hob and 20minutes in a 180 degree oven (200 degree if not a fan oven)
- Chop the cauliflower into large florets and place in a pan of boiling water to cook for about 5minutes. Drain and set aside
- Finely chop the garlic. Heat the butter in a frying pan and add the garlic and cook for 30 seconds
- Add the creme fraiche, wholegrain mustard, dried mixed herbs and black pepper and stir over a low heat until the creme fraiche begins to thin a little
- Add the milk and 2/3 of the cheddar cheese to the sauce and stir until the cheese has melted
- Place the brazil nuts in a blender and blitz until finely chopped
- Add the cooked cauliflower to the sauce and stir around until it's all coated
- Place into an ovenproof dish and top with the remaining cheddar cheese and the chopped nuts and cook for around 20minutes until the top is lightly golden
