As a sushi enthusiast, being invited to attend a sushi masterclass at the University of Sushi was a very exciting prospect. The university is one of a kind in London and was opened by Sushi Gourmet, the fastest growing sushi provider in Europe, as a training base for their chefs. Luckily for me they recently opened their facility to the public, giving sushi novices the opportunity to learn the art of sushi making.
The University of Sushi is situated in the heart of Bank in the beautiful Leadenhall market. Inside it looks like a typical sushi shop, not dissimilar to Itsu or Wasabi, with shelves of mouth-watering sushi displayed in open fridges. Upstairs however, has been converted into a mini training kitchen for sushi chefs in the making.
The masterclass was led by Sushi Gourmetโs sushi sensei who began with a demonstration on how to fillet and prepare the fish. He expertly dissected the giant salmon with speed and delicacy until he was left with a neat row of salmon slices, making it look almost easy.
After sharing their tips on making the perfect sushi rice, they showed us how to roll Maki, Nigiri and California Rolls as well as demonstrating how to assemble Poke. We were then given free rein to make our own sushi creations!
With an assortment of different ingredients available to us, including fresh fish, avocado and cucumber, we got carried away stuffing our nori wraps and decorating them with spicy mayonnaise, sesame seeds and even crispy onions.
Two bottles of Kirin Ichiban, Japanโs premium beer, and two shots of sake later, the class came to an end. We proudly sat admiring our handy work and enjoying the senseiโs delicious salmon nigiri.
I not only left with two plates of mouth-watering sushi and a goody bag, but I also left with the sense of having learnt something valuable and the confidence to recreate it at home. For those of you who prefer to just eat it rather than make it, Sushi Gourmetโs delicious dishes are also available in a selection of Sainsburyโs stores across the UK.
